Broccoli Stem Fries

I love finding new ways to use up scraps in the kitchen instead of just composting! If you know me - you know I love french fries, so when I saw Carleigh from @plantyou  share her broccoli stem fry recipe I just had to try. 

Ingredients

2 broccoli stems
1 dash of Cornstarch
1 cup almond milk 
1 cup breadcrumbs (I used Gluten Free)

Peel the tough outer layer of the broccoli stems with a vegetable peeler. Then cut the broccoli stems into planks or sticks, just like real fries! 

Then place them in a bowl and add the cornstarch and toss them until they are all coated evenly. Add your almond milk to the bowl and mix again. 

Prepare a baking sheet and preheat the oven to 400 degrees. Use tongs or your fingers to coat the stems in your favourite breadcrumbs. Line them up and fill the tray! 

Put the stems in the oven for 15 minutes until they are golden brown. I would also recommend putting these in your air fryer too! 

The verdict - not bad! They definitely are not comparable to a good classic potato fry, but they do have amazing crunch factor. They were very delicious and would make a great healthy snack or side, and a wonderful fun way to eat veggie scraps too.
